Take 4 cups Cooked Rice
Take 350 g Chicken Meat (minced)
Get 100 g Szechuan Pickles (washed, drained, chopped)
Make ready 2 Tbsp Chilli Bean Paste (Dou Ban Jiang)
Prepare 1 Tbsp Salted Black Bean (washed, drained, minced)
Take 20 g Garlic (minced)
Prepare 20 g Ginger (minced)

Get 30 g Spring Onions (chopped neatly, whites and greens separated)
Take 6 Tbsp Cooking Oil
Make ready 2 tsp Sugar
Take 1 tsp Light Soy Sauce
Get 1 Tbsp Szechuan Pepper (ground)
Instructions to make Szechuan Fried Rice:
EGG; add 1 Tbsp of cooking oil snd cook the egg scrambled. Remove and set aside.
CHICKEN; Heat 2 or more Tbsp of cooking oil until hot. Fry the szechuan pepper for 30 seconds or until fragrant. Then add 50 g of the szechuan pickles, mix well and fry that for 1 minute. Next add the chicken and cook it until brown on both sides. Remove and set aside.
PASTE; Heat another 2 or more Tbsp of cooking oil until hot and fry the ginger, and garlic until fragrant. Then add the black beans and cook that for 30 seconds. Then add the chilli bean paste and fry or until the oil becomes red (30 seconds).
RICE: Then, add the rice and mix well. Then add the remaining szechuan pickles and mix well. Taste the fried rice; if it isn't too salty then add just 1 tsp light soy sauce and mix well.
ASSEMBLY; Now add in the chixken and the egg and mix well. Turn off the heat. Serve and garnish with spring onions.
