  1. Take Olive oil
  2. Make ready 1 red onion, sliced
  3. Take 1 brown onion, sliced
  4. Prepare 3 cloves garlic, crushed
  5. Get 1 red pepper, deseeded and membrane removed in bite-size chunks
  6. Prepare 1 yellow pepper, treated similarly
  7. Take 2 large courgettes, chopped into bite-sized pieces
  8. Take 2 aubergines, chopped into bite-sized pieces
  9. Make ready 2 x 400g tins tomatoes, chopped
  10. Make ready 1 tsp sugar
  11. Make ready 1 tsp dried oregano
  12. Take 1/2 tsp thyme

Steps to make Rough & Ready Ratatouille:
  1. Heat oil in sauté pan and fry onions for 4 minutes on a medium heat. Stir only if needed to avoid sticking. Add garlic, stir gently and cook a further 2 minutes.
  2. Add the peppers and cook for a further 5 or so minutes until the vegetables are softened, stirring occasionally. Set aside.
  3. Add a little more oil and gently fry the courgettes and aubergines together for 10 minutes or until softened, stirring occasionally.
  4. Return the onions, garlic and peppers to the pan. Stir gently but thoroughly. Then add the tomatoes, sugar, herbs and seasoning and cook for 15 minutes. Stir and serve.
