  2. Get 150 g Rice

This version is a little thicker and meant to be enjoyed as a dessert, as it's paired with diced mango that is gently cooked in caramelized honey. Once the pudding is cooked, season it with the nutmeg, stir and remove the heat. Add half of the mango mixture back to the pan, and mix. To serve, ladle the pudding into a bowl and garnish with the reserved mango mixture.

Steps to make Mango Rice Pudding:
  1. Chop up one mango, blend all of the flesh to make a puree
  2. In a large pot add the rice, 1/2 the mango puree and honey. Stir together and cover with water, bring to the boil.
  3. Whilst boiling chop up the other mango into small chunks, add half of this to the rice. Add the salt. Simmer the rice for about 40 minutes (until it is cooked) adding more water if needs be, stir it frequently as it is prone to sticking to the bottom.
  4. When the rice is done take it off the heat and stir through the rest of the puree. Half the remaining mango pieces and add these.
  5. Portion it off into small bowls and top with the remaining mango chunks and a drizzle of honey.

Add half of the mango mixture back to the pan, and mix. To serve, ladle the pudding into a bowl and garnish with the reserved mango mixture. Mango Rice Pudding is an interesting twist to the authentic Indian rice pudding recipe. It is made by combining mango puree with rice pudding along with some chopped nuts. Meanwhile, peel and core the mango.
