The ingredients needed to make Saffron Pudding(Phirni):
  1. Make ready 2 litre milk
  2. Prepare 1 cup rice powder
  3. Prepare 1 cup cold water
  4. Make ready 1 cup sugar
  5. Take 3 tbsp honey
  6. Prepare 1 tsp saffron soak in hot milk
  7. Make ready 4 tsp chopped pistachios
  8. Get 2 tsp chopped almonds

Stir the saffron mix into the pudding. Add the sugar and cardamom powder, and cook, stirring constantly, until the sugar is completely dissolved, a couple of minutes. A basic pudding or kheer recipe, is made by cooking raw rice in thickened and sweetened milk. Likewise, the phirni too, is a rice pudding.

Instructions to make Saffron Pudding(Phirni):
  1. Take a vessel then put milk boil then add sugar,saffronmilk, chop almonds mix and boil.
  2. Take a bowl put rice flour add cold water mix make a lump free slurry.Then slurry add in boiled milk and immediately mix in milk and cook for thick consistency.
  3. Then cool. After cool add half quantity of chop pistachios mix.
  4. After room temperature then add honey mix.
  5. Serve chilled Saffron Firni.

However, in a phirni instead of cooking whole rice grains in milk, coarsely ground grains are used. This Mughalai Indian dessert, is rich, creamy and indulgent.
