Heat oil in a medium saucepan. Saute the onion and garlic until softened and slightly browned. Season with oregano, bay leaves, sugar, salt, and pepper to taste. Put spices and herbs in with the mashed potatoes & milk.

  2. Spread the oil on a flat oven tray. This is to form a crust at the bottom and prevent sticking.
