Doodh pak is a rich and aromatic traditional Gujarati style rice pudding sweet dish. It is Gluten-free, Eggless, Kid-friendly, and a Satvik dessert recipe. I prepared Doodh pak with Milk, Rice, and Sugar Nuts as the base ingredients, it is such a divine dessert. I flavored it with Nutmeg powder, Cardamom powder, and Saffron.

This is an extra-rich rice pudding made with short grain rice, a nod to my Okinawan heritage. The recipe calls for already-cooked short-grain rice (likely from a rice cooker) and is a great way to use leftover rice. The pudding is done when the rice and milk have amalgamated into a thick porridge-like consistency. DO NOT OVERCOOK or the pudding will be solid instead of creamy once cooled.

Instructions to make Dudhpak (Rice pudding):
  1. First take deep and heavy bottomed pan and grease it with ghee so that milk won’t stick at bottom. Now add milk and bring it to a boil. After that lower the flame and boil it again for 3-4 mins.
  2. Now take pre soaked basmati rice and drain extra water. put 1/4 tsp ghee in rice and mix it. Add rice into the milk and mix it well. Now let the milk simmer on low flame until rice is cooked.
  3. Stir the milk frequently and after milk comes to boil, check the rice. after the rice is cooked add sugar and again cook it for 2 minutes on medium flame.
  4. Now add blanched almonds, pisti, pinch nutmeg powder, gulkand,cardamom powder, grated cashews,rose syrup.mix everything well. yummy yummy dudhpak is ready to serve.

The pudding is done when the rice and milk have amalgamated into a thick porridge-like consistency. DO NOT OVERCOOK or the pudding will be solid instead of creamy once cooled. Remove from heat and stir in vanilla. Turn into a bowl or cups. You can sprinkle cinnamon on the top if you like.
