Look for a non-alkalized one for this old-fashioned recipe.

  1. Mix 1 cup of oil with 1 cup of sugar add 2 eggs add 1 tsp vanilla extract and red food color mix well, add 2 cups flour+2tsp cocoa powder+1tsp baking soda and add 1 cup milk + 2 tsp vinegar. Mix well to avoid lumps and bake in preheated oven till a tooth inserted comes out clean.
  2. Mix 1&½ cup sugar with 1 cup oil add 2 eggs and 1 tsp vanilla extract mix well add 1 cup milk add 2 cups flour+ little salt+1 cup cocoa powder + 2 tsp baking powder+ 1 tsp baking soda and slowly add hot coffee, mix well to avoid lumps. Bake in pre heated oven until a toothpick inserted comes out clean.
  3. I used whipped cream frosting and chocolate to cover the cake

Nowadays most cocoa powders are alkalized, as in stripped of acid. Look for a non-alkalized one for this old-fashioned recipe. Completing the classic look is a coat of bright white ermine frosting, cooked the old-fashioned way. Is red velvet a chocolate cake? Although there's cocoa powder in the recipe, the amount is rather small and the flavor of chocolate is subtle, so it isn't meant to be a chocolate cake.
