Tantanmen is Japanese ramen version of dandanmian (dandan noodles), a noodle dish originating from Chinese Sichuan cuisine. It's much smoother and easier to adopt Sichuan flavor, so you must try! This is my new ramen recipe in awhile, so I know how excited you are right now! So let's jump into the recipe!

The ingredients needed to make Tantanmen Ramen:
  1. Prepare Tare
  2. Take 9 tbsp Tsuyu (Japanese soup base sauce)
  3. Make ready 6 tbsp Tahini
  4. Make ready 3 tbsp chili oil
  5. Prepare Meat
  6. Prepare 500 g minced pork
  7. Take 6 tbsp chili oil, approximately
  8. Take 9 cloves garlic, chopped
  9. Get Half an inch ginger, chopped
  10. Take 3 tbsp hoisin sauce
  11. Get 3 tbsp oyster sauce
  12. Take 9 tbsp rice wine or any dry white wine
  13. Prepare Soup base
  14. Make ready 3 cups water
  15. Prepare 6 cups unsweetened soy, oats or cashew milk
  16. Make ready 2 chicken bouillon
  17. Make ready Noodles and toppings
  18. Get 3 portion dried or fresh ramen noodles, cooked per instruction
  19. Prepare Bakchoy, blanched
  20. Prepare 3 ramen eggs
  21. Prepare Handful bean sprouts, blanched
  22. Prepare Spring onion
  23. Take Chili oil, as desired

It's a delicious but quite heavy ramen. Tantanmen is really nice with the addition of sliced roast pork belly along with the mince,. Dan Dan Noodles, also known as Tantanmen Ramen or Tan Tan Noodles, combine delicious ramen noodles & ground pork with a spicy, creamy broth seasoned with chili oil, peanut butter and sesame paste.

Instructions to make Tantanmen Ramen:
  1. To make the tare, mix all ingredients until well combined. Set aside.
  2. To cook the meat, heat the chili oil, and sauté the garlic and ginger for about 1 minute. Add the hoisin and oyster sauce and sauté for about 2 minutes. Add the meat and stir fry on high heat. Add a splash of wine and continue to saute the meat until there is no more moisture and the meat is cooked through. Set aside.
  3. To make the soup base, combine water, milk and chicken bouillon in a pot. Turn on heat and bring to a light simmer. Keep warm.
  4. To assemble, put about 2 tbsp of tare in the bottom of the bowl then then add the soup base. Add the ramen noodles and the toppings. Garnish with green spring onion onion and additional chili oil as desired.
