The name is derived from the word okonomi, meaning "how you like" or "what you like". Okonomiyaki (literally means 'grilled as you like it') is a savory version of Japanese pancake, made with flour, eggs, shredded cabbage, meat/ protein and topped with a variety of condiments. Okonomiyaki is a cabbage pancake covered with Okonomiyaki sauce. Okonomiyaki is found anywhere in Japan, but is big in the Osaka area in western Japan where we are (proudly) from. Flipping the okonomiyaki is the only slightly difficult step. You can try to flip it by hand, but you have Don't feel compelled to choose between utensils when eating an okonomiyaki.

Steps to make Okonomiyaki:
  1. Mix the cabbage, flours, hondashi, chicken, beni-shoga, half of the green onions, and just enough water to make the batter come together. More cabbage > less batter.
  2. Traditionally, grated Nagaimo would create a bouncy texture; but I used Tapioca flour as a replacement. Should have the same gooey-ish consistency.
  3. In a wide, shallow pan over medium heat, pour in your batter and flatten to create a circle. Heat on both sides til lightly charred. Set on a plate.
  4. Here’s the fun part. Smother the okonomiyaki sauce around the pancake like pizza sauce.
  5. Drizzle the mayo
  6. Top with the seaweed and katsuobushi
  7. ..the rest of your green onions and sesame seeds. Enjoy!
