Steps to make Phoney-gemista:
  1. Sauté the onion, the garlic and the zucchinis in a pot.
  2. Add the rice and sauté slightly..
  3. Add the finely chopped tomato, the water, hot, the sugar, the salt, the pepper, the parsley and the spearmint and let everything boil over low heat for 10 minutes.
  4. Using a baking tray or a pyrex tray (of 24Χ34 cm) place a layer of 4 tomatoes  and 2 peppers cut into slices. Season with salt, lightly.
  5. Add the rice and the raisins (if you use any) and place the mixture in the pyrex baking tray.
  6. Add a layer of the remaining 4 tomoatoes and 2 peppers. Season with salt and add a little sugar and a little olive oil..
  7. Bake in a moderate oven covered with aluminum foil using the radiant elements for about 45 minutes.
  8. 10 minutes before it is cooked remove the aluminum foil and add a little kefalotyri or feta cheese on top (if you like).
